Pineapple Hot Dish
Serves 6 to 8
My grandmother Florence served this dish alongside a ham at Easter. We kids felt we were getting away with something, because we were able to eat this wonderfully sweet dish for dinner! It also pairs well with any smoked meats.
What you need:
1 pound 6 ounces pineapple, cut into chunks
1 cup bread crumbs
½ cup sugar
2 large eggs
2 ounces unsalted butter, softened
½ teaspoon kosher salt
1/8 teaspoon cayenne pepper
What to do:
Preheat the oven to 325 degrees F.
Combine all ingredients in a mixer fitted with a paddle attachment, and mix thoroughly. Transfer to a 13 x 9-inch casserole and bake 40 minutes, rotating the pan after 20 minutes. Set aside to cool for 5 minutes before you serve.
